Description

HIDA is a brand of Wagyu beef that originates from Gifu Prefecture, home to part of the Northern Alps mountain range which play a part in ecosystem that ensures that waters are pristine and the air is pure. But beyond just the origin of the cattle, there are other criteria that needs to be met for meat to be branded as HIDA beef. Stringent requirements include originating from Kuroge Gyu (Japanese Black Cattle) that is native to Japan, being raised and fattened by an accredited cattle farmer in Gifu Prefecture, and also have a meat quality grading of 3 to 5 from the Japan Meat Grading Association. It is arguably on par with the majestic, famed KOBE Beef (from Hyogo Prefecture), with high quality meat and beautiful marbling on both the steak and fat coating. In recent years, HIDA beef has taken home top honours at the Wagyu Olympics in both the bull division and the meat division. If we had to describe this in 3 words, it would be juicy, tender and a true melt-in-the-mouth experience.
