Aji – Japanese Horse Mackerel
Aji is an extremely popular fish that are mainstays on the menus of many sushi restaurants. Aji can be prepared and served in many ways – raw, sushi, cured with salt and vinegar, simply grilled or deep fried. Accentuating its complex fatty taste with garnish such as wasabi, green shiso leaves and ginger are also recommended to bring out the sweet and flavourful nuances of the fish.
