Ao “Green” Ume is essentially refers to un-riped plum, which is most commonly used in the preparation of Umeshu (梅酒). Fortunately or unfortunately, it is available for a fleeting few weeks every year.

- Availability: early Summer (usually in early June, for a period of 2 weeks)
- Preparation method: steeped in white liquor with rock sugar (you’ll get some nice earthy flavours in your homemade Umeshu 自製梅酒)
