There are many different types of Ika that can be found in Japanese waters, and Aori Ika (アオリイカ / Bigfin Reef Squid) might just be the tastiest one! With it’s rich, sweet flavour profile, it pairs well with sushi rice but also works great on it’s own. Texturally, it can be on the tougher ore more chewy side, and it’s ideal to score the flesh or slice it really thin. These come already cleaned and filleted, ready to be sliced and consumed as sashimi!
