“Honmaguro” refers to the Northern Bluefin Tuna – the largest of its species. Each Tuna can grow up to 700kg and span more than 4 meters long. “Akami” refers to the leanest portion of the Tuna and it offers firmer meat with more bite than the Ootoro and Chutoro cuts.
