Weekly Uni Special – Honmaguro / Bluefin Tuna
Chutoro 中とろ refers to tuna that is medium fatty. This is found either on the underbelly or on the backloin (nearer the skin). This weeks Tuna comes from the backloin – which gives it a nice balance Akami (lean meat) and Toro, creating a beautiful gradient of pink. Flavour-wise, the fat is sweet and the lean flesh is full of umami. Our Bluefin Tuna is sourced from the waters of Japan, where it is sustainably wild caught, or responsibly harvested from sustainable farms.
