What you will need:

  • Akami (Sliced) – we used Honmaguro Akami; but Mebachi also works
  • Japanese Sushi Rice
  • Koikuchi Soy Sauce
  • Mirin
  • Sake
  • 3 to 5g, dried Kombu

[Ratio for Soy sauce, Mirin, Sake = 1:1:1; 50 to 60 ml each should be sufficient for 200g of Tuna]

Toppings – Optional but we recommend:

  • Oba leaf and Kogiku
  • Pasteurized raw egg yolk
  • Sesame seeds
  • Wasabi
  • Chopped spring onions
  • Yaki Nori

Step 1: Preparing the marinade for the Akami slices

  • Combine cooking sake and mirin in a small saucepan and boil for 1 minute to remove alcohol.

  • Turn off heat, add soy sauce, and cool the marinade quickly (place in the fridge or ice bath).

  • Once cooled, add the Akami Slices and a piece of Kombu (Dried Kelp) on top, making sure the fish is flat and evenly coated.

  • Cover with cling wrap, ensuring direct contact with the tuna, and refrigerate for 20 to 30 minutes. Remember, the longer the marination, the deeper colour and a more intense flavour. Too long and it may get too salty.

 

Step 2: Assembling Your Akami Zuke Don

  • Fill a bowl with warm sushi rice.

  • Lay the marinated Akami Tuna slices over the rice.

  • Add a pasteurized egg yolk on top for richness.

  • Drizzle about half a tablespoon of the tuna marinade over the bowl.

  • Garnish with fresh oba leaves, kogiku flowers, sesame seeds, or your favorite toppings.
