Description

Kinki キンキ, or the Channel Rockfish, is a highly prized delicacy known for its rich, fatty flesh and deep, sweet umami flavour. We recommend having it simmered (nitsuke) or salt grilled (shio yaki) as these methods allow its delicate texture and high fat content shine. While available most of the year, it is best in Autumn / Winter.

Note: As these are wild-caught, actual size and weight may vary. Minimum weights are guaranteed, and larger catches are a bonus. Images shown are for reference only. Do note that weight / size specifications provided are for whole, unprocessed fish. If you have opted for your fish you be processed (I.e. under “Preferred specs”, all options with the exception of “Whole”), weights will be lower that specified due to removal of guts / scales etc.
