Description
Delicately sweet with a soft, melt-in-your-mouth texture, Anago (Conger Eel) is a sushi favourite. These are not processed, allowing you to season as desire. They are typically simmered in a shoyu-based mix before being glazed in a sweet tare to serve.
Note: As these are wild-caught, actual size and weight may vary depending on the season. Minimum weights are guaranteed, and larger catches are a bonus. Images shown are for reference only. Do note that weight / size specifications provided are for whole, unprocessed fish. If you have opted for your fish you be processed (I.e. under “Preferred specs”, all options with the exception of “Whole”), weights will be lower than specified due to removal of guts / scales etc.
